Ingredients

  • Thin Sliced Chicken Breast

  • 2 TBSP Oil

  • 1/2 TBSP: Salt, Pepper, Garlic Powder, Minced Onion, Paprika, Cumin, Chili Powder, Cilantro

  • TSP of Cayenne Pepper

  • 2 TBSP Butter

  • 1 C Jasmine Rice

  • 2 TBSP Minced Garlic

  • 1 Can Diced Tomatoes and Green Chilies

  • 1 Can Tomato Sauce

  • 1.5 C Chicken Broth

  • White Queso

  • Fresh Cilantro

Preparation

Step 1


Slice the thin chicken breast into small strips. Place the chicken in a large bowl, drizzle it with oil, and season with salt, pepper, garlic powder, minced onion, paprika, cumin, chili powder, cilantro, and cayenne pepper.


Step 2


Place the chicken in a buttered skillet and cook it until its internal temperature reaches 165 degrees. Into the skillet, incorporate rice, minced garlic, diced tomatoes with green chilies, tomato sauce, and chicken broth. Allow the mixture to come to a simmer, then cover the skillet and cook on low heat for 15 minutes.


Step 3


Drizzle your preferred white queso over the chicken and rice, then sprinkle with fresh cilantro. Serve as is or wrapped in flour tortillas!
