Ingredients

  • Salt & Pepper

  • 1 C Flour

  • 4 TBSP Butter

  • 3 TBSP Olive Oil

  • 1/3 C Lemon Juice

  • 1/2 C Chicken Broth

  • 1/4 C Capers

  • 1/3 C Parsley

  • Angel Hair Pasta (optional as side)

Preparation

Step 1


Sprinkle salt and pepper on the chicken. Coat the chicken in flour, then shake off the surplus.


Step 2


In a large skillet over medium-high heat, melt 2 tablespoons of butter along with 3 tablespoons of olive oil. Once the butter and oil begin to sizzle, add 2 pieces of chicken and cook for 3 minutes. When the chicken is browned, turn it over and cook the other side for another 3 minutes. Remove and transfer to a plate.


Step 3


Add the lemon juice, stock, and capers to the pan. Place it back on the stove and bring to a boil, making sure to scrape up the browned bits from the pan for added flavor. Taste and adjust the seasoning if necessary. Put all the chicken back into the pan and let it simmer for 5 minutes. Transfer the chicken to a platter. Stir the remaining 2 tablespoons of butter into the sauce, then pour it over the chicken.
