Ingredients

  • 1.5 LB Ground Beef

  • 2 TBSP Oil

  • 1 White Onion

  • Desired Amount Of Each: Red Pepper Flakes, Oregano, Cumin, Onion Powder Garlic Powder, Cayenne Pepper, Salt & Pepper

  • 1 TBSP Tomato Paste

  • 1 C Beef Broth

  • 2 Cups Shredded Pepper Jack Cheese

  • 2 Cups Cheddar Cheese

  • 2 TBSP Butter

  • Fresh Cilantro

  • 4-5 Limes

Preparation

Step 1


Heat oil in a large skillet and start softening the white onion. Add the beef and cook until fully browned. Incorporate red pepper flakes, oregano, cumin, onion powder, garlic powder, cayenne pepper, salt, and pepper. Then, include tomato paste and beef broth. Let it simmer for 5 minutes.


Step 2


Start putting together the quesadillas by placing pepper jack cheese on one half of the tortilla, followed by the beef mixture, lime juice, cilantro, and finishing with cheddar cheese. Fold the tortilla in half and move it to a buttered skillet to cook.


Step 3


Cook for 2 minutes on each side. Slice into quesadilla portions and serve with fresh cilantro and lime juice.
