Ingredients
Shredded Chicken Breast or Rotisserie Chicken
1/2 C Monterey Cheese
1/2 C Sharp Cheddar Cheese
1 lb Bacon
3 oz Cream Cheese
1/4 C Greek Yogurt
1 TBSP Paprika
1 TBSP Cumin
1/2 TBSP Chipotle Powder
1/2 TBSP Chili Powder
3 TBSP Cilantro
2 TBSP Chopped Jalapeno
8 Almond Flour Tortillas
2 TBSP Butter
Queso (optional)
Preparation
Step 1
Arrange the bacon on a baking sheet and place it in the oven at 400 degrees for 15 minutes. After it's cooked, slice the bacon.
Step 2
In a large mixing bowl, combine chicken, shredded cheese, cream cheese, yogurt, jalapeno, cilantro, and bacon.
Step 3
Add the chicken popper mixture to the almond flour tortillas to form tacos.
Step 4
Put the tacos in a buttered skillet and cook until they are golden brown on each side.
