Ingredients

  • Shredded Chicken Breast or Rotisserie Chicken

  • 1/2 C Monterey Cheese

  • 1/2 C Sharp Cheddar Cheese

  • 1 lb Bacon

  • 3 oz Cream Cheese

  • 1/4 C Greek Yogurt

  • 1 TBSP Paprika

  • 1 TBSP Cumin

  • 1/2 TBSP Chipotle Powder

  • 1/2 TBSP Chili Powder

  • 3 TBSP Cilantro

  • 2 TBSP Chopped Jalapeno

  • 8 Almond Flour Tortillas

  • 2 TBSP Butter

  • Queso (optional)

Preparation

Step 1


Arrange the bacon on a baking sheet and place it in the oven at 400 degrees for 15 minutes. After it's cooked, slice the bacon.


Step 2


In a large mixing bowl, combine chicken, shredded cheese, cream cheese, yogurt, jalapeno, cilantro, and bacon.


Step 3


Add the chicken popper mixture to the almond flour tortillas to form tacos.


Step 4


Put the tacos in a buttered skillet and cook until they are golden brown on each side.
