Ingredients
Thin Chicken Breast
Olive Oil
TBSP Minced Garlic
1/2 TBSP Paprika
1/2 TBSP Minced Onion
1/2 TBSP Onion Powder
Salt & Pepper
Can Sweet Corn
Frozen Package Fire Roasted Corn
4 TBSP Butter
3/4 C Heavy Whipping Cream
1-1.5 C Grated Parmesan Cheese (More If You Want!)
Fresh Parsley
3 TBSP Hot Sauce
Preparation
Step 1
Cut slits into the chicken breast and drizzle oil over each piece, rubbing it in thoroughly. Mix together minced garlic, minced onion, paprika, onion powder, salt, and pepper, then evenly distribute the spice mixture onto the chicken. Rub it in well.
Step 2
Cook the chicken in an air fryer at 400 degrees for 15 minutes. If you don't have an air fryer, you can bake the chicken at 400 degrees for 15-17 minutes.
Step 3
In a cast iron skillet, combine canned corn and fire-roasted corn. Cook for 1 minute, then incorporate butter and heavy cream. Bring the mixture to a simmer, lower the heat, and stir in parmesan cheese.
Step 4
Place the chicken breast in the cast iron skillet alongside the corn. Sprinkle with hot sauce, additional parmesan cheese, and fresh parsley.
